If you can't get enough of Taco Tuesdays (Who can?) or are stuck in a dinner rut, we have a fun new twist on your favorite fixin's! Stuffed Pepper Bowlsingredients 1# ground beef (or preferred substitute) 1 packet of taco seasoning bell peppers 1 can of peeled, diced tomatoes cheese 1 box yellow rice directions
Prepare yellow rice according to package directions. While rice is cooking, brown meat and use seasoning packet according to package directions. Add can of diced tomatoes to seasoned meat. Chop bell peppers into bite-size pieces. Once rice and meat are fully prepared, scoop desired amount of rice into individual serving bowls. Layer with desired amount of chopped peppers, meat and tomato blend, and top with cheese.
